Švestouka is a typical dish of the Czech Paradise area in East Bohemia. It is an unusual combination of smoked meat and plum sauce. It is served with potato gnocchi.
4-6 serves, preparation time 40 minutes
- 600 g cooked smoked pork
- 250 ml broth smoked
- 250 g plum jam
- 100 ml of red wine
- 3 tablespoons honey
- grated lemon peel
- hammering cloves
Use a bouillon of smoked meat to prepare the sauce. Stirring constantly, add the jam, honey, half a teaspoon of cinnamon, grated lemon zest and a pinch of crushed cloves. Pour in the red wine and add salt. As needed it thicken with roux. Let simmer briefly and add back sliced cooked meat into the prepared sauce. Let boil together. Serve with potato gnocchi.
