Carnival donuts
Shrove Tuesday is a day, when they are held parades of masked and theatre performances. Czechs bake divine grace (the recipe you can find in section Desserts) and carnival donuts (Czech: masopustní koblihy).
Ingredients:
- 500 g plain flour
- pinch of salt
- lemon peel
- 30 g yeast
- 220 ml cream
- 2 sugar cubes
- 6 egg yolks
- 60 g caster sugar
- 3 tablespoons rum
- 80 g butter
- jam filling
- oil for frying
- powdered sugar for sprinkling
Preparation process:
Flour, salt and lemon zest sift in a bowl. Crumble the yeast in a little cream and sugar. Whisk the egg yolks with the sugar until thick over steam, add the remaining tepid cream, risen yeast, melted butter and rum. Blend well and pour the flour. Develop smooth, but non-sticky dough. On a floured pastry board roll out the dough to about 1.5 cm tall slab and cut wheels by mould. To the middle half of them, apply a little jam, cover with another wheel and get together. Leave the donuts covered with a cloth for about half an hour to rise. Pour enough oil (donuts there must swim) into a pot or pan with a high edge and heat it well. Carefully insert the donuts so that they do not touch themselves. Fry them covered for a moment, then turn and uncovered them and fry from the other side. Excess fat allow sucked on kitchen paper and cold donuts only lightly sprinkle with powdered sugar.
